The Belew’s Maple-Themed Recipes!

Chewy Maple Cookies

  • 1/2 cup shortening
  • 1 cup packed brown sugar
  • 1 egg
  • 1/2 cup Messenger Century Farm Pure Maple Syrup
  • 1/2 teaspoon vanilla
  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt (optional)
  • 1 cup flaked coconut

Preheat oven to 375 degrees.

Cream shortening & brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed.

Combine flour, baking powder, and salt. Add flour mixture to the creamed mixture. Stir in coconut. Drop by teaspoons 2” apart onto greased baking sheets (Dee uses parchment paper).

Bake for 10-12 minutes. Remove from oven and transfer to a cooling rack.

 

Dee’s Maple Land Steward Cookies

  • 1/2 stick salted butter softened
  • 1 cup Messenger Century Farm Pure Maple Syrup
  • 2 beaten eggs
  • 1-1/2 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. ground cloves
  • 1/2 tsp. ground cinnamon
  • 1-1/2 cups walnuts (not chopped)
  • 1 cup raisins (golden or dark)
  • 32 oz. of pitted dates

Preheat oven to 350 degrees. Prepare your cookie sheets with parchment paper or a baking sheet.

Combine butter and pure maple syrup in mixer. Gradually add the beaten eggs. Stir in the flour, baking soda, salt, cloves, and cinnamon. Fold in the walnuts, raisins, and dates.

Because of the maple syrup, the cookies spread on the cookie sheet. Dee uses half of a teaspoon of batter to form each cooking on the cookie sheet.

Bake for 12 minutes. Remove from oven and transfer to a cooling rack.

 

Roasted Maple Nuts

  • 1 pound mixed nuts
  • 1/4 cup Messenger Century Farm Pure Maple Syrup
  • 2 Tablespoons brown sugar
  • 1 envelope ranch salad dressing mix

In a bowl, combine nuts and maple syrup and mix well.
Sprinkle brown sugar and Salad dressing mix. Stir gently
to coat.

Spread in greased 15 x 10 x 1” pan.

Bake at 300 for 20-25 minutes or until lightly browned.

Cool. If for some reason you cool it too long and cannot get the nuts off
the cookie sheet, place back in the oven for 1-2 minutes to soften for removal.
Store in an airtight container.

Yields 6 cups.

 

Maple Cinnamon Coffee

  • Ground Coffee for 12-cup pot
  • 3/4 teaspoon ground cinnamon
  • 1/2 cup Messenger Century Farm Pure Maple Syrup
  • Water

Place filter in brew basket of coffee maker. Add ground coffee for a full pot and
3/4 teaspoon ground cinnamon.

Pour 1/2 cup Messenger Century Farm Pure Maple Syrup into empty coffee pot.

Add water to coffee maker and brew.

After brewing is complete, stir coffee well.

If you desire, top off with whipped cream or cool whip!

 

Dee’s Maple Chili

  • 1 pound lean ground beef
  • 1/2 cup Messenger Century Farm Pure Maple Syrup
  • 1 can dark kidney beans
  • 1 can black beans
  • 1 can canelli beans (or add any beans you prefer)
  • 3 teaspoons of chili powder,
  • Additional “hot” spices, as desired
  • Salt and pepper, to taste
  • Tomato sauce and/or juice

Brown 1 pound of lean ground beef (Dee uses the leanest so there is hardly any fat) and drain any fat after cooking;  add 1/2 cup Messenger Century Farm Pure Maple Syrup and simmer slightly.

Remove ground beef and add chopped onion and green pepper to the pan and saute in the remaining syrup/drippings.

Add beans, chili powder, and additional spices. Add tomato sauce and/or juice (Dee uses a combination of tomato juice and V-8 juice until she reaches her desired consistency for the chili broth).

Simmer for an hour and enjoy!
